F45 Challenge Diary: Nutty Coconut Brekkie Bowl


Before I introduce you to my latest obsession - I have something that I need to confess...


Social media is a tricky thing. It's so easy to give into the temptation of depicting a lifestyle where everything is perfect, where everything goes to play and you're killing it at life (and I've definitely been guilty of this at times). But that just isn't the reality in most situations. My F45 Challenge journey so far has been yet another example of things not going to plan... not in the slightest. 

I want to be honest with all of you and not try to hide from the fact that I have well and truly fallen off the bandwagon. It would be easy to sit here and put down a lot of blame on multiple factors - I've recently started a new job and I've been busy, I moved and that was stressful, my knee hurts and my back kills, blah, blah, blah. But the truth is, I have lacked the motivation necessary to give another challenge my all. It just hasn't been my priority. 

But it's not all doom and gloom! While I haven't been as dedicated as I would've liked and haven't achieved the same results as last time, it hasn't been completely terrible. I've been eating alright, I've been training sometimes, and I've lost 5kg, but there is definitely room for improvement. I may never be the definition of #bodygoals, but the challenge isn't over yet and I will always keep trying. 

Rather than dwelling on my failures, I'd rather focus on the positives.... and damn this nutty coconut brekkie bowl has definitely been a positive in my life right now - I CAN NOT GET ENOUGH OF IT!
It's so good even Daisy wants to get in on the action. 

When it comes to the F45 meal plans, I always find myself enjoying the sweet dishes over the savoury. There is generally an abundance of protein and vegetables, so I find myself craving the sweeter breakfast and snack options. So far I've been loving the smoothies, breakfast bowls and protein balls. I guess it comes down to personal preference and I'm definitely guilty of having a sweet tooth. 

This brekkie bowl contains 354 calories of deliciousness. As far as fat content goes, it's on the higher end of things (32.8g) but it's low carbs (9.3g), low sugar (3.7g) and super filling so I'm not complaining. 

One of the things that I love most about this recipe is how quick and easy it is to make. You can make multiple at a time, leave them in the fridge and grab one when you're ready. It's probably a little too dangerous - I could eat this all day, every day!

Here's how you make it:

Ingredients

- 4 almonds, chopped
- 4 cashews, chopped
- 2 tsp, coconut flakes
- 1/4 cup raspberries, 130 g coconut yoghurt (unsweetened)
- pinch cinnamon
- pinch stevia

Method

1. Combine the coconut yoghurt with the almonds, cashews, coconut flakes and raspberries in a bowl
2. Sprinkle the cinnamon and stevia over top
3. DEVOUR!

One tip that I have when it comes to coconut yoghurt is to shop around because there are some super expensive options out there. Most stores sell it for around $10-$14, however I found a brand in Woolworths (Nakula) that is only $7 and has the lowest calories out of all of them, so it really is a win win!
